Catfish fillets are breaded in a spicy cornmeal coating and fried in a pan until perfectly browned. Try replacing them with cod or tilapia for a delicious variety.

Ingredients
- 1/8 cup of cornmeal
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 4-ounce catfish fillets (cod or tilapia if desired)
- 2 teaspoons of vegetable oil
- 1 lemon or lime, cut into quarters
Directions
- Rub the seasoning by placing the cornflour, oregano, cayenne pepper, thyme, paprika, salt and pepper on a plate and blend well.
- Dip each side of the catfish in the spice mixture.
- Place the pan on the stove over high heat.
- When the pan is hot, add oil. Add the fish and cook for about 4 minutes on both sides until browned and cooked through.
- Serve immediately garnished with lemon or lime slices.
