COOKING TIPS
Try any kind of fish and even chicken.
Change the taste by adding lemon juice or lemon pepper.
Try salsa instead of fresh tomatoes and green onions.
Ingredients
- 1 package (10 ounces) of frozen spinach, thawed
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 pound fish fillets, thawed
- 1 teaspoon Creole or Cajun spice mix
- 1 large tomato, diced
- 4 green onions, sliced
Directions
- Preheat oven to 350°F.
- Squeeze the thawed spinach to remove most of the liquid. Spread on the bottom of a 9 x 13 inch baking dish. Sprinkle with salt and pepper.
- Place the fish fillets on the spinach. Sprinkle with the spice mix. The best fish with tomatoes and green onions.
- Cover the baking dish with foil and bake for 15 minutes. Remove the foil and bake for a further 20 minutes or until the fish falls apart easily.
- Store leftovers in the refrigerator within 2 hours.
