Using peppers and lettuce for wraps is a fun option to add more veggies to your plate. Lettuce leaves and mini peppers are perfect for a Southwestern meal by itself or as an appetizer.
Preparation time: 45 minutes
Ingredients
- 6 sweet mini peppers, cut in half
- 8 lettuce leaves
- 1 cup of easy brown rice, cooked in line with package directions
- 1 pound tilapia fillets, fresh or frozen, thawed
- 2 teaspoons Southwest chipotle spice (sodium free)
- 2 tbsp rapeseed oil, divided
- 1/4 teaspoon of salt
- 2 limes, divided
- 1/4 cup of reduced-fat sour cream
salsa fresco
- 1/2 cup yellow corn, frozen or canned (no salt added)
- 1 medium tomato
- 1 small onion
- 1 garlic clove, chopped
- 1 jalapeno pepper, chopped
- 1/4 teaspoon of salt
Directions
- Cut the pepper in half vertically. Arrange the lettuce and 8 bell pepper halves on a platter.
- Cook the brown rice in line with the instructions on the package.
- Sprinkle either side of the tilapia fillets with Southwest chipotle seasoning.
- Heat 1½ tablespoons canola oil in a big non-stick skillet over medium heat. Add the fish to the pan and cook for 3 minutes on either side (the fish needs to be opaque and the interior temperature needs to be at the least 145°F). Fluff with a fork and place in a serving dish.
- When the rice is prepared, add the remaining ½ tbsp oil, juice of 1 lime and salt. Dice the remaining of the lemon.
- To make salsa fresca, dice the remaining pepper halves, tomato and onion; mix with corn, garlic, jalapeño pepper and salt.
- To serve, prepare a platter of pepper lettuce, rice, fish, salsa fresca, sour cream and lime, and guests will construct their very own boats and wraps.
