Grapes are the natural balance for this sweet and spicy shrimp salad. Enjoy as a sandwich or on lettuce.

Serving suggestions: Serve with a glass of skimmed milk and bunches of red grapes.
Suggestions for choosing and storing grapes:
- The grapes are fully ripe after they arrive on the supermarket.
- Search for plump grapes with supple green stems.
- Keep the grapes unwashed and refrigerated in a plastic bag until able to use, then rinse with cold water and serve or add to recipes.
Ingredients
- 1/2 pound frozen cooked cocktail prawns, thawed, peeled and deveined
- 1 8-ounce can of no added salt yellow corn kernels, drained
- 1 cup canned black beans without salt, drained and rinsed
- 1 stalk of celery, diced
- 2 tablespoons chopped onion
- 2 tablespoons of low-fat mayonnaise
- 1/2 tbsp salt-free Caribbean citrus seasoning
- 8 slices of wholegrain bread
- 2 tomatoes, sliced
- 4 leaves of Bibb lettuce or other leaf lettuce
Directions
- Coarsely chop the prawns.
- Mix all ingredients except bread, tomato slices and lettuce.
- Divide the salad evenly over 4 slices of bread; spread on the perimeters of the bread.
- Top with tomato slices, lettuce and a second slice of bread.
